After watching Paranormal Activity (Pretty scary stuff!) this evening I was feeling particularly sleepless, and in need of a distraction.
What better distraction than quail eggs sous vide?

Quail eggs sous vide
I started by preheating the Sous Vide Supreme to 125F, then placed the quail eggs in a small ceramic ramekin (to keep the from resting directly on the bottom of the water tank. I didn’t vacuum seal them as that would probably crush them.) I cooked the eggs for 20 minutes.
To plate them, I (very gently) cracked them, then drizzled with white truffle oil and black lava sea salt
Exquisite!
(Who’s afraid of ghosts when you’ve got truffled quail eggs?)
